Turkey and Dried Cherry Pasta Salad

Ingredients

Pasta Salad

  • 1 lb bowtie pasta
  • 1 tsp olive oil
  • 8 oz smoked turkey breast, cut into 1/2″ cubes
  • 5 1/2 oz dried cherries (about 1c)
  • 1/2 cup yellow onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup whole almonds (1/2-1c)

Poppy Seed Dressing

  • 2 cups mayo
  • 2 tsp dijon mustard
  • 1/4 cup powdered sugar
  • 2 tbsp champagne vinegar
  • 2 tbsp water
  • 1/2 tsp black pepper
  • 2 tbsp poppy seeds
  • 2 tsp salt

Instructions

  1. Mix together all dressing ingredients and set aside.
  2. Cook pasta al dente, rinse in cold water, toss in olive oil & cool completely.
  3. Combine pasta, turkey, cherries, celery & half of almonds in large bowl. Mix in (half?) dressing until coated.
  4. Let sit for a few hours or overnight so the cherries can absorb the liquid & plump up.
  5. Add additional dressing if too dry
  6. Top with remaining almonds before serving.
